My wife has had both the R1100R and the R1150R

and i got to ride them quite a bit too....

frankly, i preferred the riding position of the R1100R. It isn't as fast, or as sporty as the 1150; doesnt' have the 6 speed gearbox, but just is comfortable and will do everything that your wife wants... except that the left hard bag is TINY! But that is your battle...

Both the F800S and the F800ST have a multitude of handlebar risers and alternative available to suit getting the grips right where they need to be.

My wife Annie just went through a similar process in deciding on a new bike. We considered the F800ST with modifications to the bars and pegs; the 1200GS because she loved the ergonomics (she has a F650GS she loves and will keep it) and ultimately the one she bought...a R1200R. The R will require some tinkering to get the ergos the way she wants them, but the bike fits her well. I like that you can make the Rs whatever you want them to be. It didn't hurt that she got a great deal on an 08 that was still on the showroom floor.

The F800 series IMO is a fine bike, the S has a more aggressive riding position than the ST but both have comparable performance.
You may be able to find one at a bargain price, given the economy.
I love my ST, it tosses easily and has some giddyup.
For day trips I find I am jumping on it instead of my RT.
