FWIW, this is an answer to a question no one would ask.
First, there is an oil temp read-out in the RID of every R12 of which I'm aware.
Second, this would not read oil temp (since it is in the vapor space under the valve cover).
Third, this would not read head temps (same reason).
Finally, even if you know what the temp of the atmosphere in the valve cover vapor space is, what useful information does that give you? I can't think of anything.

Assuming it is temp, not barometric pressure, sound pressure, or a rain gauge.
Assuming since it is on a custom bike made by galaxy customs that it was fabricated.

You will have to remove the dipstick, as it might interfere with the valve train.
A slightly more useful approach would be to attach an air temp gauge like this:

I would be interested to hear their explanation of its purpose. I am guessing it is nonfunctional as is much of the design of this bike. IMHO
