The paper filter element will make a nice wick.

Oil mist will eventually saturate the element and start to drip onto the top the transmission. Keep an eye on it.

I'm also building a cafe bike and incorporating an "oil catch can".

Just make sure the catch tank has a breather ... or you'll be right back where you started.

On the positive side Shane. WIthout the attendant "elbows" associated with the original carb/air cleaner set up, checking the catch tank won't be overly troublesome.

The cables look great, Shane. Have Josh make up a second set, for spares. BTW, you'll want to keep the pivot thingies at the ends, nicely greased. If you don't, they will break in one of your remote, and scenic, places in the Dakotas.

I was going to edit my post, but you beat me to it: the cables are actually quite reliable; just keep an eye on the ends for fraying.
