So what's a ring-taxi?
It kinda sounds like she's someone who shows a visitor what it's like to go around the track fast.

I own two Bimmers (neither of them an M5) which have been on the track only once each. Wouldn't it be great to be able to drive like her? Wow - what a job - and to have someone who really loves to do it!

She is incredible. She did a bit on Top Gear flogging a Ford Transit Van about the track.
Part 1
Part 2
Her skill is something else and her laugh and zest for life is infectious. I am in love.
In this video she the Boys are following her in a Porsche. Pay attention to how she has to deal with motorcycles and other traffic.
Pass the mustard and UP THE REVOLUTION!
She is AWESOME. I'd love to have her drive me around the ring. That would be so cool.

Sabine has traveled around the ring more than any other person on earth. And she is considered the formost authority regarding traveling around the ring. Not sure who would rank 2nd. She has gone around well in excess of 1,000 times.

There are a bunch of prominent Ringmeisters: Walter Rohrl is perhaps the highest profile Porsche guy. Others include Marc Basseng (the new unofficial record holder), Michael Vergers, Timo Kluck, and the guy who has posted the most times seems to be Horst von Saurma. Not sure who would rank 2nd...stkmkt1
I watch a lot of Ring videos, but my favourite is this one, a 993 RS vs. a 996:

Put your headset on, and crank up the sound.
