My 07 GT seems to have quite an appetite for headlight bulbs, every 3-5000 miles or so. Seeing as these things are not cheap and getting to them is a PITA I was wondering if is there any one else who's run across this issue?.

Can't speak to the 07 GT - but i went thru one 2 bulbs on my 08 RT - to the point I always carried a spare just in case....

I'm thinking about going to HIDs on the low beams.
Are they likely to last longer than normal bulbs?

Yes they should - like i mentioned ealier the light of the HID is acutally an arc of electricity going from one side to the other.
There is no formal filament that needs to be heated up which is prone to mechanical wear and tear.
Plus one of the great benifits is much more light for less power consumed.
