Been looking for a fairing for my R80 ST. I have no experience with handlebar mounted fairings. There are three options I am considering:

1. Use a R90S type fairing with a talller windscreen
2. Use a full coverage National Cycle screen that covers the hands
3. Use the Parabellum screen made for the bike, does not cover hands

Can anybody give me some sage advice about these options? In particular, I am concerned about any stability problems a fairing might cause

I put a Parabellum Scout on my R75/6. Lightweight, looks good performs well, rather expensive. Like a 90S fairing, and you can get a taller screen. Maybe a hint of low speed instability (~30mph) but stable at higher speed.
I have to say that overall I really like it.

I too have an R80ST. It came with one of the full size national screens on it, and it was the first thing I removed.
I now have one of the deflector screens on it, and if I feel the need for hand coverage, I can always add a set of GS handguards.
I dont particularly care for the full size handlebar mount fairings. I have had a couple incidents with tankslappers due to them catching the wind the wrong way.
If you want the one I took off, I will make you a deal on it.

Attached is a photo of my silver bike, a 1984 standard R100. The fairing is a BMW item and the windscreen is a medium ht. Parabellum. The windscreen takes the brunt of the wind off me, but my Wife, on the back gets some buffetting. If I tuck under the rim of the windscreen it gets quiet. They make a taller windscreen that is quieter.

In my experience, taller is not always better. Seems like many of the "sporty" sized windscreens put the maximum buffet line right at the helmet. If you can find one, I'd try the stock "S" fairing first and then think about whether or not to go with the taller windscreen.
One of my favorite screens from years/bikes past was a small flyscreen that was just enough to break the windblast but left my helmet in clear air.

Yes, the tank slapper incidents have me concerned. Thanks for sharing that on this thread. I think I will need to avoid the full sized fairings.

Do the Parabellum Scout or R90S fairings interfere with maintenance, or are they pretty much out of the way?

The R90S/R100S fairing does complicate brake fluid replacement and access to the fuse terminal inside the headlight shell, and of course the headlight bulb. It is pretty easy to remove the 2 strut bolts that stabilize the upper part of this fairing, then entire fairing hinges on the turn signal stalks. One can get at most of what needs to be done this way, and it only adds a few minutes to the task.
