I just installed two 30 amp relays under the dash so the main headlight power doesnt go through the handlebar switch. Rather the switch triggers the relays and the Voltage to the headlights comes directly from the battery to the relays.
My question is : Is a 16guage stranded wire straight from the battery ample enough to supply the headlight, 65watt high beam should be just over 5 amps.
I believe stock wiring is 18 guage to the lights.

If the stock 18g wiring isn't suffering any ill effects of load such as getting hot, then the 16 should be fine.

Yeah, you know how easy it is to overthink things though. Always wanting to
"beef" stuff up. Thats why these forums are so great!

16 should be fine. I usually go for overkill, however. I used 14. Rig up your horn the same way, while you're at it. Much more volume!
