Loyalists fleeing the colonies after the Revolutionary War probably carried the original idea to the Bahamas and British Caribbean, as survival food not plantation slave staples. During the centuries that followed in America and the West Indies, “johnny cake” became a generic label for simple breads, corn or flour. Bahamian johnnycake recipes include both: some are baked like sweet Yankee cornbread and others resemble our fried flour dough flitters.

This is an “ugly” thing compared to today’s fancy breads and their perfect shapes. Old time johnnycake is just simple flat bread, but right from the pan, it is so delicious with coffee or porridge for breakfast or for supper too.

Break apart the johnnycake into pieces—don’t slice it!

2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1-2 teaspoons sugar (optional)
1 tablespoon Crisco shortening
Water to make a firm dough
Just in time for the start of a new rally season

A camping recipe for "johnny-cake".

Take a pre-prepared mix of 1 quart yellow granulated corn meal, 1 pint white flour, 1/2 cup sugar, 1 teaspoon salt, 4 teaspoons baking-powder.

In camp it can be mixed with water to a heavy batter, like pancake batter, and then fried, like pancakes, in a greased frying pan. If made with less water into a stiff dough it can be baked from the bottom up in a frypan until the top has set then turned over and finish-baked on the other side. Don't make the cake too thick so that it will get enough heat to bake in the middle.

If you have an old time wood fire - or maybe a barbeque would work - you can wrap long strips of the dough spirally around a peeled wood stick and bake over the fire.

I prefer the same recipe with buckwheat flour instead of corn meal and to use unbleached flour instead of white flour. And adding an egg or two and using milk instead of water for pancakes. But you can make it in many ways, to suit your fancy and all are better than the store-shelf "pancake mix".
