'79 R 100 Tire and Faring Queustions

Are there any suggestions for a rear tire for 2 up sport touring?

I was at vintage motorcycle days in mid-Ohio and saw an R100 S faring that was flared at the leading edge different then the stock. Any ideas as to where to find such a faring?

The fairing is a Parabellum Scout. I don't know much about tires for your bike. I know Bridgestone S11's last pretty long and don't wiggle on rain grooves. If possible, use Metzeler or Continental tubes because they don't deflate as fast when punctured.
